Valentine’s Day, as we know it today, has roots far older than chocolates and cards.


Long before it became commercialised, this time of year was connected to fertility, renewal, and the early stirrings of spring. As a pagan and a vegan, I love reclaiming Valentine’s as a celebration of connection, intention, and nourishment for ourselves, for our loved ones, and for the earth.

These vegan peanut butter blondie flapjacks feel like the perfect offering for that energy. Made with humble, plant-based ingredients, they’re warming, grounding, and comforting, exactly what’s needed as the wheel of the year begins to turn toward light.


The Pagan Roots of Valentine’s Day

Valentine’s Day falls close to Imbolc, a sacred pagan festival marking rebirth, creativity, and the returning light. Traditionally, this season was associated with:


  • Awakening energy in the land

  • Fertility and growth

  • Love in its many forms; romantic, familial, and self-love


Rather than focusing solely on romance, pagan traditions honour love as nourishment, the kind that sustains us through the darker months and prepares us for renewal.


Baking during this time can be a form of ritual in itself. Stirring with intention, choosing cruelty-free ingredients, and sharing food is a quiet act of magic.

Vegan Peanut Butter Blondie Flapjacks Recipe

Ingredients

  • 2 tbsp vegan butter

  • 6 tbsp peanut butter

  • 3 tbsp golden syrup

  • 100 g brown sugar

  • 300 g rolled oats

  • 25 g vegan white chocolate (for topping)

  • Pinch of pink Himalayan salt

Method

  1. Preheat your oven to 180°C fan / 200°C conventional / 350°F/Gas Mark 4.

  2. Gently melt the vegan butter, peanut butter, golden syrup, and brown sugar together in a pan over low heat until smooth.

  3. Remove from the heat and fold in the rolled oats, stirring with intention.

  4. Press firmly into a lined baking tin and smooth the top.

  5. Sprinkle over the vegan white chocolate (I break up some vegan white chocolate buttons for ease).

  6. Sprinkle the salt ontop (I highly recommend this step as it is a flavour game changer. It elevates the sweetness while enhancing the rich, nutty notes. It makes every bite more balanced, layered and indulgent.)

  7. Bake for 10 minutes, until lightly golden.

  8. Slice while warm, then leave to cool completely in the pan before removing and cutting fully.


Serving & Sharing Ideas

  • Serve with a cup of tea, or dairy-free milk for a cosy self-love moment.

  • Wrap in parchment and ribbon for a thoughtful homemade gift.

  • Add a sprinkle of pink hearts or edible flowers for a festive touch.

  • Use them as an offering to honor the turning of the seasons or personal intention rituals.


Love doesn’t have to be loud to be powerful. Sometimes it looks like oats, peanut butter, and a quiet moment of care.
