A little bit of what you fancy.... but better.
Sometimes you want a burger.
Not a sad “clean eating” burger - A proper, nostalgic, messy, Big-Mac-style situation.
So I turned that craving into something plant-powered, protein-packed, and wildly satisfying.
And yes… this one happens to be a salad.

This Vegan Big Mac Daddy Salad is my answer to those cravings — all the flavours you love, minus the heaviness. It’s stacked with protein (50g!!), loaded with crunch, and drenched in a smoky, tangy burger-style sauce that honestly deserves its own fan club.
We’re not about that restrictive diet life here at The Green Grimoire. Nothing wrong with enjoying a burger as a treat — but sometimes it’s nice to take the thing you’re craving and make it work for you.

Vegan Big Mac Daddy Salad (Serves 1)
Ingredients
Salad
220g vegan mince (I use Vivera mince for the high protein)
132g shredded lettuce
¼ brown onion, finely diced
4 pickles, diced
4 baby plum tomatoes, sliced
15g grated vegan cheese (I love plant based cathedral city)
1 tsp sesame seeds
Big Mac–Style Sauce
1 tbsp reduced sugar ketchup
1 tbsp pickle juice (straight from the jar — trust me)
½ tbsp mustard
2 tbsp Alpro Greek-style yoghurt
1 tbsp vegan mayo
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tbsp nutritional yeast
Salt and pepper(to taste)
Method
Pan-fry the vegan mince in a tsp of oil over medium heat until browned and slightly crispy around the edges. Season lightly if needed and set aside.
In a small bowl, whisk together all sauce ingredients until smooth, creamy, and tangy. Adjust spices to your liking — this is your burger moment.
Add shredded lettuce to a bowl and spoon the warm mince over and top with grated cheese.
Drizzle generously with sauce, then finish with diced onion, pickles, tomatoes, and a sprinkle of sesame seeds.
Eat immediately! This is not a polite salad. Mix it all up and dig in.
