Simple Vegan Miso Soup
There is something deeply comforting about a bowl of miso soup.
Whether you're feeling under the weather, need a light lunch, or simply want a moment of calm in a busy day, miso soup feels like a gentle reset. Warm, savoury, and nourishing, it's one of those recipes that proves simple food can be incredibly satisfying.

Miso soup has been enjoyed in Japan for centuries and remains a staple of Japanese cuisine today.
Traditionally served alongside rice and other small dishes, it's often enjoyed as part of breakfast, lunch, or dinner. While there are countless regional variations, the heart of miso soup remains the same: a flavourful broth enriched with fermented miso paste.
One of the reasons miso soup has remained so popular is its nutritional value. Miso is made from fermented soybeans, a process that creates beneficial bacteria and compounds that support gut health. Combined with protein-rich tofu, mineral-rich seaweed, and nutrient-packed spinach, this simple soup delivers plenty of nourishment in every bowl.
This vegan version comes together in minutes and relies on a handful of ingredients to create a deeply savoury broth that feels both comforting and restorative.
Health Benefits
Miso
Miso is a fermented food made from soybeans and is a source of protein, vitamins, minerals, and beneficial compounds produced during fermentation. Many people enjoy incorporating fermented foods into a balanced diet to support digestive health.
Tofu
Tofu is an excellent source of plant-based protein and contains important minerals such as calcium and iron. It helps make this soup more satisfying while keeping it light.
Nori
Seaweed is naturally rich in minerals, including iodine, which plays an important role in supporting normal thyroid function.
Spinach
Spinach contributes fibre, folate, iron, and vitamins A, C, and K, adding both colour and nutritional value to the soup.
Ingredients
(serves 2 as a main, 4 as a side dish/starter)
750ml vegetable stock
3 tbsp white miso paste
200g firm tofu, cubed
2 spring onions, sliced
1 sheet nori, cut into thin strips
2 large handfuls fresh spinach
Optional additions: mushrooms and beansprouts
Method
Bring the vegetable stock to a gentle simmer.
Place the miso paste into a small bowl and whisk with a ladle of hot stock until smooth.
Reduce the heat and stir the miso mixture back into the pan.
Add the tofu, nori, and spinach.
Allow the spinach to wilt gently for 1-2 minutes.
Warm everything through without allowing the soup to boil.
Ladle into bowls and finish with sliced spring onions.
Serve immediately and enjoy a little bowl of comfort.
Kitchen VVitch Tip
Never boil miso after adding it to the soup. High temperatures can diminish some of the delicate flavours developed during fermentation. Keeping the broth at a gentle heat helps preserve its rich umami character.
For an extra boost of umami and plant-based protein, stir in 1-2 tablespoons of nutritional yeast before serving. It adds a subtle savoury richness that pairs beautifully with the miso and tofu.
One of the things I love most about miso soup is how much it offers with so little effort. A few simple ingredients come together to create a nourishing meal that's been enjoyed in Japan for generations.
The combination of savoury miso, silky tofu, fresh spinach, and delicate seaweed creates a bowl that's both comforting and refreshing. Whether you're looking for a light lunch, a soothing starter, or simply a moment of calm in a busy day, this soup is always a wonderful choice.
Sometimes the simplest recipes carry the most wisdom, and miso soup is a perfect example of that.
Blessed be,
